Here it is:
Chocolate Peanut Butter Balls (recipe comes from Gluten-Free Baking Classics by Annalise Roberts, page129)
1/2 cup unsalted butter (I used organic, rolled butter)
18 oz smooth peanut butter (I used organic, unsalted, unsweetened)
3 1/2 cups confectioner's sugar (I used organic)
2 1/2 cups gluten free crispy rice cereal (Whole Foods carries this but you could probably use Rice Crispies)
16 oz semisweet chocolate, chopped (I used organic, unsweetened, dark)
- Mix butter, peanut butter, and sugar together in large mixing bowl of electric mixer. Beat until creamy.
- Add crispy rice cereal and mix until cereal is incorporated into dough. Chill until cold.
- Form into 1 inch balls (rolling them into balls is easier when dough has been chilled--supposedly...I still had a time with this) and refrigerate 12 hours (I put them in the freezer because I didn't have 12 hours)
- In a double boiler or microwave, melt chocolate and keep warm.
- Dip balls into warm chocolate. Place on wax paper to cool. Refrigerate until chocolate hardens. Store in refrigerator in airtight container. Serve at room temperature or slightly chilled. Best when eaten within 1 week.
- Makes about 72
Looks like Deanie and NicholAss are still having fun in Park City--
On the creative front, I can't tell y'all what inspired me because it may or may not be a gift for one of the lovelies or someone else.

You too and I love your recipe. I might try it on a good willpower day. I am not having one right now.
ReplyDeleteI could eat the house if it was made of chocolate or pizza. :)
Have a great weekend.
This is a winner! For very special occasions - or people. Thanks.
ReplyDeleteFG- I understand! That's why I made them on a day when the college kids were coming over. I knew they would take those things back downtown with them! LOL Keep strong! And away from chocolate and pizza!
ReplyDeleteStephanie- Agreed! I might be adding them to our Christmas goodies menu!
Holy Moly! I am on a chocolate/pb kick these days. As a matter of fact, I have a quart of Edy's chocolate peanut butter cup icecream in the freezer.. hmm.. must .. get.. spoon.. now..
ReplyDeleteNicole- Then stay away from these because they are so easily popped into the mouth. One right after the other. LOL
ReplyDeleteOh yum! Those sound delicious. I think I'll be making these the next time my teenage son has friends over (so that there won't be leftovers for me to eat!! I think I could get in a a lot of trouble with those!)
ReplyDeleteLisa- That's exactly why I made them the night the college crew came over! LOL Enjoy! BUT not too much. :)
ReplyDeleteThanks so much for the thingy recipe, Pam! I shall enjoy trying those. Enjoy your weekend my friend.
ReplyDeleteDiane- You're quite welcome! You might want to make them when people are there to take them away. :)
ReplyDeleteThank you for the recipe. They sound yummy. Let me know if I can pin it to Pinterest.
ReplyDeleteThose look addicting, so I will wait until I'm invited to a social of some sort to make them. If they're at my house with me alone - things could get ugly. :)
ReplyDeleteOh my, that looks simply delicious!
ReplyDeleteThanks....I think! :-)
ReplyDeleteDebby- You're welcome! They are good- and the kids loved them! Yes, you can pin it!
ReplyDeleteMA-They are- which is why it's very smart to wait until other people will eat them!
Maren-They were good!
Barb- Right?! LOL
These sound wonderful -- of course, anything that combines chocolate and peanut butter will make me very happy :-) I need to try these soon!
